The real beef is a cut of fine meat obtained from the front part of the forequarter of the bovine, precisely from the neck muscles. Real has an intense and strong flavour, typical of high quality beef, with slightly sweet notes due to the presence of fat and medium marbling, i.e. infiltrations of fat which melt during cooking, making the meat softer and tastier.
